Sheet Pan Greek Chicken & Veggies w/ CassCaps

Ingredients:

1 1/2 pounds boneless, skinless chicken breasts cut into 1-inch pieces
1 pound tiny potatoes
1 small onion, sliced
1 zucchini, sliced
1 chopped bell pepper
2 tablespoons olive oil
1 1/2 teaspoons garlic powder
1 teaspoon dried basil
1 teaspoon Italian seasoning
1/2 teaspoon salt
Juice from 1/2 lemon + zest
1 cup cherry tomatoes
1 cup canned artichoke hearts
2 tablespoons fresh dill, chopped
1/2 cup feta cheese

Instructions: 

1. Preheat the oven to 400 degrees.

2. On a large sheet pan or 2, add the chicken, potatoes, onion, zucchini and bell pepper. Toss with the olive oil, garlic, basil, Italian seasoning, and salt.

3. Bake in the oven for 20 minutes and stir. Add in the cherry tomatoes, artichokes, lemon juice and zest.

4. Cook for another 10 minutes and once the chicken is cooked through and veggies are softened, toss with the dill and feta cheese.
